Abstract: „Politehnica” University of Bucharest Faculty of Applied Chemistry and Materials Science Wines authentications by chemometrics processing of the information provided by spectrometric and chromatographic methods Food authentication represents one of the main issues in food quality control and safety. Wine authentication becomes very important due to the continuous diversification of producers, replacing of traditional processing procedures with less-known ones, attempts to develop compositions that either start with positive intentions, whether are void adulteration, all of these requiring quick and objective control. For wines authentication we need fast and accurate methods for their analysis. In this study were developed authentication methods for Romanian white wines based on the analytical information provided by modern physical methods (1H-NMR, HS-SPME-GC-MS and FT-IR). Composition data obtained and statistical processing by PCA method – Principal Component Analysis, improved by an original optimization procedure enabled authentication in terms of variety, geographic region and crop year of seven varieties of Romanian white wines (Sauvignon Blanc, Muscat Ottonel, Riesling, Chardonnay, Fetească Albă, Pinot Gris and Columna), produced in the vineyards Murfatlar, Medgidia, Dealu Mare and Odobești. We also determined the composition of products resulting from the winemaking process (wine, must, grape seed – the grape seed oil), using the physical methods mentioned. To verify the authentication methods, we analyzed a number of commercial white wines and wine blends (binary blends). The application of 1H-NMR and FT-IR spectroscopy methods were studied in the wine production process control. Scientific supervisor: Prof. Ph.D. Sorin ROȘCA Ph.D. Student: Anamaria BUNGHEZ (HANGANU)
